Beets & Broccoli for Breakfast

by KalaLea on March 30, 2011 • Posted in News

imgs_beetsbroccoliHow many times have you stored left over veggies in your fridge from last night’s dinner yet never got around to eating them?

Weeks ago, I discarded nearly $15 in old produce and I’m not doing that anymore. In an effort to waste less food and money plus get my super nutrients at the start of the day,  I ‘m eating leftover veggies for breakfast. This morning, I re-heated a bit of broccoli & beets in a glass pan while I prepared for my day. (I’m no longer a fan of the microwave.) The process took a total of 2 minutes. While checking email, Facebook, and the weather, I ate a yummy bowl of beets & broccoli with a drizzle of extra virgin olive oil (ex voo), salt and pepper.

I’m writing from work now because as I climbed my usual eight flights of stairs today, I noticed how SUPER my body is feeling. Quite different from the days when I’ve had a bagel or toast for breakfast. Try eating your leftover veggies for breakfast so nothing goes to waste or the compost bin.  Let me know if you feel any significant changes.

and speaking of beets (well beats), I’m working on a new podcast this week so please look out!

Thanks for reading and Happy Wednesday!!
