How many times have you stored left over veggies in your fridge from last night’s dinner yet never got around to eating them?
Weeks ago, I discarded nearly $15 in old produce and I’m not doing that anymore. In an effort to waste less food and money plus get my super nutrients at the start of the day, I ‘m eating leftover veggies for breakfast. This morning, I re-heated a bit of broccoli & beets in a glass pan while I prepared for my day. (I’m no longer a fan of the microwave.) The process took a total of 2 minutes. While checking email, Facebook, and the weather, I ate a yummy bowl of beets & broccoli with a drizzle of extra virgin olive oil (ex voo), salt and pepper.
I’m writing from work now because as I climbed my usual eight flights of stairs today, I noticed how SUPER my body is feeling. Quite different from the days when I’ve had a bagel or toast for breakfast. Try eating your leftover veggies for breakfast so nothing goes to waste or the compost bin.
