WDIET : Wow! Menu Recipes

With the excitement of my first WDIET : Wow! workshop, I failed to take photos of the food before the participants devoured these yummy, vegan treats but we managed to take one shot before packing up. Seeing that it was teetering on ninety degrees HOT, it was important for me to prepare light yet filling dishes. I only used the stove once to cook the pasta; I put my blender to good use though! Check out the workshop menu below:

Strawberry cucumber smoothie:

      Strawberries
      cucumber (with the skin)
      fresh mint
      fresh lime juice (optional)
              filtered water

When juicing or making smoothies, I do my best to use organic produce. Please rinse your berries, cucumber and fresh mint then add all ingredients to a blender. If you’re funny about textures, feel free to remove the skin from the cucumber but this is extra work.

BLEND it UP!
Blend ingredients together and serve immediately. Ultra-refreshing with a capital REFRESH!

Whole wheat pasta with vegan pesto sauce:

      fresh or dry pasta (follow instructions)
      pine nuts (1 cup or so)
      extra virgin olive oil
      fresh basil (whole bunch)
      2-3 cloves of fresh garlic
      juice from fresh lemon and limes
      nutritional yeast (1/3 cup to start – add bit by bit)
      sea salt
              dried red chili flakes

BLEND it UP!
Blend all ingredients together while pouring the ex olive oil slowly. Taste, add, and taste some more until it feels right :)

Tomato sauce:

        cherry tomatoes (pint or whatever you have)

 

        rehydrated sun-dried tomatoes (a large hand full)

 

        extra virgin olive oil

 

        garlic powder

 

        onion flakes

 

        dried basil

 

        dried marjoram

 

        paprika
        cayenne pepper

 

        Bragg’s amino acid or sea salt

 

      molasses (1 small TBSP)

BLEND it UP!
Put all of the ingredients in the blender. Add what you think is missing then store in fridge until ready to serve.

So Good for You Salad:

        Boston lettuce
        fresh parsley
        red cabbage
        sunflower sprouts
        radicchio
        fresh red pepper
        fresh green pepper
        fresh mint
        carrots

    ume plum vinegarextra virgin olive oil

          black sesame seeds

      Semolina Golden Raisin & Fennel Bread by Amy’s Bread

      Organic dark chocolate covered espresso beans by Kopali Organics

      Organic chocolate caramel crunch with sea salt by Equal Exchange

      Dark Chocolate Quinoa Bar by Alter Eco
