live & in color kale salad

Serves 4-6 seekers of all things bright and light!

I’m in a very green mood these days — my awareness is heightened and I am practicing saying YES to what life offers me. If you couldn’t tell by now, kale is my favorite leafy green vegetable. Read the other posts to find out what makes kale a must-eat-veggie.

What You Need:
1 bunch of kale (feel free to use 1/2 for less people)
2 TBSPs of extra virgin olive oil (a.k.a. ex voo)

Extra ingredients that make this salad special:
Cucumbers
Carrots
Radishes
Red PeppersParsley
Sprouts
Tomatoes
Avocado
Olives
Any fresh herbs
Seaweed (dulse flakes or nori sheets)
Seeds of your choice: sunflower, sesame, pumpkin
Any type of lettuce you like (but don’t massage these)
Gomasio or Eden Shake

COOKWARE
You’ll also need 2 large bowls:

1) for rinsing
2) massaging

PREP IT UP !
* Fill one of the bowls with cool water
* Separate the leaves from the middle stem then place in the bowl nearly filled with water
* Once you have all of the leaves in a bowl, gently swish them around in the water to wash
* Lift the kale leaves from the bowl of water, squeeze a bit to drain excess water then place in the 2nd bowl
* In that bowl, drizzle the 2 TBSPs of ex voo over the kale
* Use one hand or both to gently massage kale leaves while singing the Kale Song:

YOU MAKE ME FEEL SO GOOOOD!

* Sing the kale song while massaging for 3-4 minutes until the color of the kale becomes more vibrant and coated in the ex voo
* Rinse your hands and store the kale stems in a bag for veggie stock or juicing
* Chop and add your favorite veggies, seeds, and even more lettuce if you wish. Have fun with it

STORAGE: Store in fridge for 2 days — maybe three if you don’t let too much air in the container and be sure to leave the dressing on the side.

A quick dressing recipe: (the ingredients required are in bold)
Diced red onions
1/4 cup of ex voo
Fresh squeezed lemon juice (1 whole lemon)
2 tsp of raw agave
2 tsp of tamari, Bragg’s amino acids, or a pinch of sea salt
cayenne pepper or paprikaΒ  (just a little)

* Whisk and adjust for your taste buds (i rarely measure so add a little at a time)

2 different kale salads – add what you like

I totally adore raw kale salads now. I’ve been eating them 4-5 times weekly.
