Kitchari – One Pot Wonder

by KalaLea on April 29, 2017 • Posted in Recipes

Spring has sprung.
Time to detox and dedicate time for your body to recharge and renew.
One of my favorite detoxifying meals seems akin to the chartreuse leaves that are bursting forth from branches to herald spring’s glory.

Kitchari is an Ayurvedic porridge made simply with mung dal and rice. Its ideal to use shelled mung beans because it cooks very quickly. Mung beans have been used for centuries as medicine as well as an important

I’m in a very green mood these days — my awareness is heightened and I am practicing saying YES to what life offers me. If you couldn’t tell by now, kale is my favorite leafy green vegetable. Read the other posts to find out what makes kale a must-eat-veggie.

What You Need:
1 bunch of kale (feel free to use 1/2 for less people)

Corny on the Cob (vegan-style)

Recipe by KalaLea K
Serves 1 person per ear of corn

Corn or maize has been around for thousands of years. It’s a pity that it’s one of the top GMO crops today. Given this fact, it’s best to buy fresh ears of corn from your local farmer’s market, CSA, or food coop. Corn is wonderful for stimulating the appetite, regulating digestion and promoting healthy gums and teeth. I’ve been eating it all summer and this

Recipe by KalaLea K

Serves 4-6 country singers

Lentils cook faster than any other bean and there’s no need to soak them before cooking. It’s my quick protein fix.

1 large Vidalia onion
2-3 garlic cloves
1 12 oz. can of diced fire roasted tomatoes
1/2 green pepper

Freaky Frozen Grapes

by KalaLea on July 29, 2011 • Posted in Recipes

On WDIET’s Facebook page, I posted this question:
What does one eat when it’s 98 degrees outdoors?
Baly, a FB fan & friend, responded, Frozen Grapes!

Having only prepared this yummy treat once, years ago, I was eager to experiment again.

Deep Purple and red grapes are loaded with anti-oxidant warriors (more so than the green or white grapes). These antioxidants are found primarily in the stem, skin, leaf and seeds of grapes, rather than

  • Stone Town, Zanzibar is a beautiful hectic island with loads of character and spice but I'll admit it, the food at the night market gets only one star for hustle and charm. The food is far from fresh. However, the location is GORGEOUS BUT it's basically for tourists. Now I know! Feel free to share your local restaurant recommendations? #stonetown #zanzibar #nightmarket #africa #wdiet #winterindar

  • First time drinking baobab juice from the Baobab tree. It's a bit grainy with a tinge of tart and sweetness. The mighty Baobab tree can grow up to 90 feet tall for approximately 500 years. The powder from the fruit is rich in vitamin C, high in protein, potassium, calcium and magnesium. The fiber helps maintain healthy bacteria in the gut too and can tackle dysentery. #daressalaam #baobab #healthybody #healthyliving #healthyeating #africa #healingfoods
