Chia Seed Pudding

by KalaLea on September 13, 2014 • Posted in News

On Saturday, September 13, 2014, I participated in GrowNYC’s Fresh Food Box Program by offering a cooking demo while serving chia seed pudding with stewed apples and plums. Although the weather was grey, we had a great day. It’s an awesome program that unlike Community Supported Agriculture (CSA), you do not need to commit for an entire season. You can order on a weekly basis. The cost of one box is $10.00 and organic eggs are

buckwheat grits

Buckwheat is protein and Vitamin B rich, effective for treating diarrhea, it cleans and strengthens the intestines, reduces cholesterol and blood pressure, strengthens the capillaries and blood vessels, plus is great in treating poor circulation. Rutin, a bioflavonoid found in buckwheat is the healing culprit. Rutin is also an antidote against x-rays and other forms of radiation.

NOTE: Buckwheat is not actually a cereal grain but a fruit seed related to rhubarb and sorrel.

Beets & Broccoli for Breakfast

by KalaLea on March 30, 2011 • Posted in News

How many times have you stored left over veggies in your fridge from last night’s dinner yet never got around to eating them?

Weeks ago, I discarded nearly $15 in old produce and I’m not doing that anymore. In an effort to waste less food and money plus get my super nutrients at the start of the day,ย ย I ‘m eating leftover veggies for breakfast. This morning, I re-heated a bit of broccoli & beets in

a savory breakfast

by KalaLea on February 17, 2011 • Posted in News

What a wonderful Wednesday! Last night after shooting the next recipe, we photographed today’s breakfast:

– cucumber and tomato salad (with a sprinkle of *xv oo, teeny bit of Bragg’s apple cider vinegar, dried chives, & fresh black pepper)
– 5 slices of Raclette cheese
– one slice of raisin and fennel semolina bread with raw honey on half

This was a yummy breakfast folks; and, less than an hour after my meal, I recall

a healthier breakfast

by KalaLea on February 16, 2011 • Posted in News

It’s taken me many years to figure out breakfast. Years ago, I ate boxed cereal, donuts, or toast with sugar and cinnamon. Primarily because it was quick but I now realized I simply didn’t know anything else existed.

You: Really KalaLea?
Me: If I’m lying, I’m frying.

Every one around me ate the same unless we were having pancakes, bacon and eggs.

This morning I ate granola with yogurt from Erivan Dairy, blackberries,

Redwood Hill Farm Yogurt

by KalaLea on January 23, 2011 • Posted in Kala's Favorites

Two to three times per week, I eat either blueberry or strawberry goat’s milk yogurt with fresh fruit and granola for breakfast. For now, my favorite brand is by Redwood Hill Farm. Last year, I could only find these products at my local coop or Whole Foods but now they sell them at the corner store (bodega) too. This makes me happy! I recently took a liking to yogurt in an effort to cut down

  • Rest in Power to Mr. Dick Gregory. His books and talks inspired me to ask questions, love myself and my people and dig deeper. If you can get your hands on his book, Natural Diet for Folks Who Eat: Cookin' With Mother Nature. It's a wonderful witty introduction to natural foods and the digestive system. Giving thanks to have lived in the same era as him. #dickgregory #naturalfood #book #healthbook #wdiet #cookbook #rip
  • What an adventure!!! After several attempts to find the local "KFC" spot, we made it last night with the help of four local friends. The kuku (Swahili) or chicken spot has been going strong for more than 30 years. The original owner passed down the biz to his grandson, Mfanyge, pictured here. Nearly every evening, Mfanyge sets up shop for a limited time in the evenings and only fries one big batch then closes shop abruptly. The key to finding its obscure location is to look for the wicker flame ๐Ÿ”ฅ I'm NOT a huge fan of chicken ๐Ÿ— but this was absolutely the juiciest and well seasoned chicken I've EVER eaten. He also adds a secret lime sauce to each piece. I woke this morning licking my fingers in search of any leftover juice embedded under my nails. The other images are of a couple food stalls in the surrounding area ... With limited light, vendors sell everything from fresh watermelon ๐Ÿ‰and avocado ๐Ÿฅ‘ slices to fried cassava and rice balls. The fried rice balls or kitumbuu were delicious ๐Ÿ˜‹ too. #KFC #africa #tanzania #chicken #friedchicken #market #riceball #watermelon #avocado #eastafrica #wdiet #foodstories #traveling #foodtravel #nightmarket
  • The inside of a graviola fruit aka #soursop #guanabana #custardapple or #Brazilianpawpaw The flesh is deliciously sweet ... but don't eat the seeds. Scientists have been studying the active compounds and chemicals in graviola since the 1940s. Compounds that have anti-tumorous properties ... still more research to do but some alternative healers use graviola to treat certain types of cancer. Always consult your doctor, if you're dealing with any major health issues. #tropicalfruit #graviola #fruit #tropical #cancer

  • The Swahili word for coconut is nazi ... it's the only nazi I support ... unless it means cheese ๐Ÿง€ in another language ๐Ÿ˜€Sooooo many benefits to drinking coconut water, eating the meat and I use coconut oil on my skin and my hair daily ... except when I'm beachin' it up. Shea butter is a better sunscreen for the skin. #coconut #swahili #traveling #africa #zanzibar #beach #coconutwater
