Brussel sprouts are out and about this season. Not my favorite vegetable, I eat brussel sprouts because they have one of the highest concentrations of Vitamin C, fiber, and folic acid plus a rich source of minerals such as copper, calcium, potassium, iron, manganese and phosphorus. Purple Frittata

Who doesn’t love breakfast for dinner? This past week, I made my first frittata EVER with brussel sprouts and purple fingerling potatoes. Purple is my favorite color — just call me Princess! This recipe is super easy and ultra-yummy — if you like eggs.
